Caymanrestaurants.com had the pleasure of sitting down with Chef Remy to learn more about both his services and his background: Where are you from originally? I am originally from Goa, one of the most popular tourist destinations in India. When did you first come to Cayman? I came to Cayman straight off a Cruise ship in 1998 and have been here ever since. Where else in the world have you worked prior to arriving in Cayman? A Deluxe Five Star resort in Goa then 8 years on Cruise Ships travelling throughout the Mediterranean countries. Who or what inspired you to become a Chef? I have always drawn heavily from my heritage in terms of philosophy, my passion for food and how it is presented. What made you decide to open Rent-A-Chef? I was asked by patrons while working as Head Chef at a popular local restaurant if I would prepare meals for them at home on my days off.  As more and more requests came in, I realized there was a gap in the market that needed to be filled.  It also allowed me more family time than when running my own restaurant. What are your favorite ingredients? Fresh basil oil, avocado and fresh local seafood. Can you share with us one of your favorite menu items? Conch Ceviche is one of my favourites.  I will share just some key ingredients that makes the difference fresh citrus juice and zest, local seasoning, peppers, red onion and Cilantro. What advice would you give to someone looking to start a culinary career? Love food! Be driven but patient because it takes time and the kitchen is unforgiving.
