Where are you from originally?
Zeltweg, Austria.
When did you first come to Cayman and why?
1996 looking for a new challenge, I have not looked back since.
Where else in the world have you worked before arriving in Cayman?
Austria, on a luxury cruise ship and in Australia.
Who or what inspired you to become a chef?
Watching my mama cook and bake was my biggest inspiration.
What would you say is the key element in running a successful kitchen?
Multitasking and working like an octopus. You always need to be aware of everything going on around you.
What is your “go to” seasoning and why?
Pepper, it brings flavour to everything.
What is your favourite dish and why?
Sausages in any form as I grew up on them.
How do you decide what to include on the menu?
I base the menu around the availability of the freshest local ingredients seasonally for ultimate flavour.
Have you ever had a Kitchen Nightmare?
Too many! But one that stands out was a birthday cake and wedding cake that got mixed up and served to the wrong customers.
What would you recommend as a romantic meal for two?
Caviar which can be served in numerous ways to produce a romantic meal. It is known for its aphrodisiac qualities.
What advice would you give to someone looking to start a culinary career?
Be willing to try everything, work hard and learn fast!

The Wharf offers feature nights, including salsa and Boogie nights and its famous for their interactive nightly tarpon feeding at 9pm, a great place to go for an exciting and memorable dining experience.
The Wharf is open Thursday through Tuesday from 4pm. Closed on Wednesdays.
Happy Hour is from 4pm – 6.30pm daily with 20 % discount at the ocean side bar.
