BAYSIDE, situated in Jacques Scott’s Plaza, next to Fosters supermarket in West Bay is set to open its doors in December, with an exciting, contemporary menu that combines international favourites with a focus on freshness, quality and affordability!

The restaurant will be offering a coffee shop style service in the mornings, with a tempting selection of barista inspired coffees, readily available “grab-and-go” items and a full-breakfast menu.

The breakfast menu will feature reimagined classics such as house-smoked bacon and eggs, avocado toast with seasonally inspired toppings and lavish lemon and ricotta pancakes. 

Lunch and dinner options celebrate Chef Joe’s passion for modern cuisine and has plenty to satisfy all palates. A few highlights include Chef Joe’s artisan burger with house smoked bacon and homemade seeded buns, the best beer-battered fish and chips on Island using local fish and local beer and served with triple cooked chips, and finally, a gorgeous vegan Laksa using house-made rye noodles and seasonal vegetables simmered in a rich and spicy coconut milk broth. 

The dinner menu will also feature classic pizzas with a twist, all inspired by Chef Joe’s international experiences. A notable mention is his classic margherita that will be served alongside Moroccan-spiced lamb with pine nuts and feta pizza. 

There will be daily specials based on seasonality and quality of ingredients and feature menus to look forward to, including a traditional British roast dinner that will be available one Sunday a month and, specialty Indian night featuring authentic “British” style curries. 

Inspiration and Background

With his extensive experience in fine dining, owner and Head Chef, Joe Hughes told me the inspiration for the restaurant came from him wanting to offer the community something modern and fresh, combining quality ingredients with authentic preparation techniques, creating the ultimate flavour and fine dining experience of more humble menu classics.

While his passion and commitment to his art are unmistakable, Chef Joe is quite unassuming in his accomplishments, giving credit to those who have inspired him over the years. He told me that one of his biggest inspirations, and someone who he credits for progressing his own cooking career, is chef Remy Lefebvre who he worked alongside at Ave Restaurant located at the Seafire Kimpton Hotel.

Joe firmly believes that the more time you put into something, the more you get out of it!

Giving back to the Cayman Community

While chatting with Chef Joe it became very apparent how committed he is to finding ways that Bayside can give back to the community. As such, Bayside will be extending a 10% discount to First Responders in appreciation of their hard work. Bayside will also be working alongside Sunrise Adult Training Center to offer the centre’s clients an opportunity to train and work at the restaurant.

Another great incentive that Chef Joe hopes to introduce is having a children’s “make your own Pizza” day!

With a relaxed, casual and welcoming environment, Bayside is set to be West Bay’s newest “must visit” restaurant!
